Baking cakes before bed
If you have put the kids to bed, finished your to-do list and you feel like baking cakes or other cooking for the morning – maybe you have somewhere to go first thing – well why not. Usually people cook in the morning or during the day, but there are no rules. Sometimes it is a lovely quite time to cook.
The kids’ school fete might be on or a party or gathering. Mornings can get quite hectic especially if everyone has somewhere to be.
Due to diet and sleep considerations it is best you do not eat your cooking now – just enjoy the smell and maybe have a warm glass of milk instead.
You might want to cook scones, cakes, cookies, bread, chocolate slices, muffins – the list is endless.
I would like to share my scone recipe (see the photo of the scones I made today). Over the years a lot of friends have given me scone recipes. You can buy a packet in the grocery store which is successful, however, cooking from the basics is always nice. Scones are a little tricky, another good reason to cook at night – less hands helping the better – scones want very little attention!
Scones
2 cups of self-raising flour
1 cup of soda water
1/4 cup milk powder
2 tablespoons butter
Add flour and powder and rub butter into flour gently. Pour in the soda water and mix only with a knife. Scones do not want to be kneaded or handled. Put onto a floured board and very gently make a rectangle shape. The mixture will be very runny. Grease a baking tray and leave the mixture as one rather than individual portions. Cut into squares once cooked. Cook in a moderate oven for 15 minutes. Check if cooked with a skewer before taking the scones out of the oven.
Enjoy! (the following day!) – or have a half of one at night!
